INGREDIENTS
1 tbsp butter
1/2 large onion, chopped
2 cloves garlic, minced
3 cups chicken broth
1 1/2 cups heavy cream
4 cups broccoli, finely chopped
1/2 tsp smoked paprika
1 tsp pepper
1/2 tsp salt
3 1/2 cups cheddar cheese
METHOD
In a deep pot, add the butter and place it over medium heat. Once hot, add the onions and garlic and stir fry for 1-2 minutes, until fragrant.
Add the chicken broth, heavy cream, finely chopped broccoli, smoked paprika, pepper, and salt, and bring it to a boil. Once it begins to boil, reduce to low and simmer for 20 minutes until the broccoli is tender.
Add the cheddar cheese, half a cup at a time, until combined. Remove from the heat and serve with extra shredded cheese and chopped parsley on top.
